Argentine Prawns

About the Recipe

This will quickly become your favorite shrimp dish!

Ingredients

  • 1 pound cleaned shrimp (alternately called "prawns")

  • 4 cloves chopped garlic

  • 2 tbsp cooking oil

  • 1/2 tsp salt

  • 1/4 tsp black pepper


For the chimichurri sauce
  • 1 c cilantro

  • 1 c parsley

  • 1 small onion

  • 1 tsp red pepper flakes

  • 3 cloves garlic

  • 2 tsp oregano

  • ½ c red wine vinegar

  • Juice of 1 fresh lime

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • ½ cup cooking oil

  • Butter flavor non-stick cooking spray

Preparation

  • Preheat oven to 375°

  • To make the chimichurri sauce, combine cilantro, parsley, onion, garlic, oregano, red pepper flakes, vinegar, lime juice, salt and pepper  in a food processor. Turn on processor and slowly drizzle in oil until a nice, green pesto-like paste is formed.

  • Lightly grease baking sheet with cooking spray.

  • In a bowl, mix cleaned shrimp with oil, garlic, salt and pepper.

  • Place layer of shrimp on baking sheet, put sheet in oven and bake about 8 to 10 minutes.

  • Serve immediately with chimichurri sauce on the side, or spooned over top.
