A delicious appetizer!

Ingredients
2 cans of corn kernels (about 3 cups, drained) or 3 to 5 ears of fresh corn, shucked
1 tbsp hot sauce
½ c mayo
1 tsp sugar
1/2 tsp salt
1/4 tsp black pepper
8 oz shredded mozzarella (whole milk)
1/4 c chopped cilantro
Butter-flavor cooking spray
Preparation
Preheat oven to 375°F. Spray a 9"x13" baking pan with butter-flavored non-stick spray. In a large bowl, combine corn, mayo, hot sauce, sugar, salt and pepper. Mix in HALF the mozzarella. Spread mixture into baking pan and sprinkle on the other half of the shredded mozzarella. Bake in oven for 15-20 minutes. If you want some melty char spots on top, broil for 1 to 2 minutes (keep your eye on it so it doesn't burn!). Remove from oven and sprinkle with chopped cilantro. Serve hot.
